This was a hugely challenging and very exciting project for Chapman Ventilation. To be instructed on one project in this major, high profile re-development would have been good, but to have 3 restaurants all next to each other was an entirely different matter.

The landlord and local authority demanded the very highest levels of odour control, fire security and noise attenuation due to problems they had encountered with previous developments, and the historical interest of Spitalfields Old Market. Indeed,

Chapman Ventilation’s main challenge was to make the recycled air clean enough so that it could discharge back into the covered market – a requirement of the planning permission.

Each Client wanted slightly different things in terms of the look and feel of their restaurant, but all needed perfect kitchen ventilation and a balanced supply system.  Each restaurant had a Halton canopy and "polustop" odour filtration package comprising ultra violet,

electrostatic and HEPA filtration. In addition, two of the three projects were fitted with the revolutionary "Firestorm" grease harvesting fire barrier system.

All three projects handed over on time, on budget, and allowed Chapman Ventilation to use their extensive skills in the many different areas to bring these installations to a satisfactory conclusion.
